On Friday, October 10, 2025, the spectacular cliffs overlooking the Pacific Ocean will come alive for the fourth annual Diwali Mela at The Ritz-Carlton, Laguna Niguel. This isn't just a dinner—it’s a high-energy, seaside celebration of the Festival of Lights, helmed by culinary standout Chef Sanjay Rawat.
A New Delhi native and Executive Chef of KAHANI, Rawat has been lauded for crafting some of the most authentic and exceptional Indian cuisine in Southern California. Rawat was born in Uttarakhand, India, and grew up in New Delhi. Cooking was a central part of his family life, which ultimately inspired his pursuit for a culinary degree in Malaysia. Over the course of 10-years, Rawat honed in on his craft and mastered regional Indian cuisine, working in kitchens across the world, from the 5-star Taj Hotel in New Delhi to a prominent restaurant group in Bermuda, before moving to Southern California. Stateside, Rawat cooked at Clay Oven, acclaimed for its introduction of modern Indian cuisine to Orange County.
