Indian-origin chef Valice Francis has been featured in the Michelin Guide. Francis is the executive chef of the San Francisco restaurant ROOH, one of the top names in progressive Indian cuisine.
Francis brings together Indian heritage and modern global influences, with ROOH describing him as the 'nose of the culinary industry', for his "uncanny ability to identify the one ingredient that transforms a dish from excellent to unforgettable".
ROOH added in a statement, "His culinary creations reflect both deep Indian roots and bold experimentation inspired by Silicon Valley’s dynamic culture."

Talking about the honor, Francis said, “Being featured in the Michelin Guide is not only a recognition of our culinary journey but also a celebration of Indian cuisine on the global stage.”

With Francis at the helm, ROOH is famous for its globally inspired, regionally influenced dishes, bringing progressive Indian flavors to a wide audience, offering classics like lamb masala and Punjabi paneer but presented with innovative flair.
