Where every 100 days brings a new taste of India

The restaurant's signature concept features a menu that changes every 100 days to showcase regional Indian cuisines.

A new Indian restaurant, The 100 Food Journey: A Tale of Indian Cuisine, has opened in Newburgh, featuring a unique dining concept with rotating menus that change every 100 days.

Located at 34 Plank Road, the restaurant officially opened following a soft-opening period. The opening coincides with the launch of the restaurant's second 100-day menu cycle, a summer-themed selection featuring seasonal dishes and regional specialties.

"Our culinary journey is constantly evolving," said Tarun Arora, executive chef and culinary alchemist. "Every 100 days, the kitchen unveils a new menu cycle that showcases distinct culinary traditions, ingredients and techniques—from the aromatic street foods of Northern India to the coastal-inspired specialties of the South."

According to the owners, the concept is designed to showcase regional Indian cuisines through regularly updated menus featuring different ingredients, cooking techniques and culinary traditions.

"We are honored to celebrate this milestone with the Newburgh and Hudson Valley community," said Glaxon Geevarghese, partner and director of brand and strategic impact at The 100 Food Journey.

Restaurant officials said the menu includes both traditional Indian dishes and chef-created offerings, including Nashik Lamb Chops, Highway ka Kukad and Patiala Lamb Shank. According to Thomas Varghese, chief culinary operations, the dishes are prepared using fresh, locally sourced ingredients and balanced spice profiles.

The restaurant's name is inspired by themes of culinary exploration and cultural exchange. According to the owners, it references the spirit of a well-known story in which an Indian kitchen encounters a celebrated French restaurant, symbolizing the meeting of culinary traditions and the discovery of new flavors.

In addition to its main dining area, the restaurant features a private dining room known as "The Machaan." The space draws inspiration from traditional elevated observation platforms, or machaans, historically used in forests.

"This setting offers guests a memorable, secluded dining experience ideal for special occasions, gatherings with friends or family and milestone celebrations," said Lijo John, Director Experiences.

The restaurant has also introduced a bar concept called "Neelantara – Horizon of Blue," which offers cocktails inspired by Indian ingredients and flavors.

"The bar's curated cocktail menu celebrates this fusion," said Abhishek Bolla, Mixology experience director, referring to the blending of Indian influences with contemporary mixology. The menu includes drinks such as an Indian Spiced Whiskey Sour and an Indian Infused Detox Cucumber & Mint Mule.
