A new Indian restaurant, ROOH, has officially opened at 633 College Street in Toronto. The restaurant focuses on offering a health-oriented menu rooted in regional Indian cuisine, nutrition, and sustainability.
ROOH is the second restaurant from the team behind Bar Goa, which was recognized in the 2024 Michelin Guide.

Founded by Jayadeep Patra, a public health scientist, ROOH emphasizes ingredient transparency and cooking techniques designed to retain nutrients. The restaurant’s staff receive training in food sourcing, preparation methods, and guest interaction, aiming to provide a consistent and informed dining experience.
This new venture continues the group’s interest in combining food traditions with health-related principles. The menu includes seasonal vegetables, fermented ingredients, and spice blends selected with attention to nutritional value.
“We apply food science alongside tradition to raise the profile of regional Indian cuisine. This method offers a new take that fits today’s changing dining scene,” Patra said.
ROOH’s operations are structured around sustainability and regional sourcing. The restaurant adapts its menu with the seasons and works with local suppliers for ingredients. These practices are intended to align the restaurant’s operations with broader goals of wellness and environmental awareness.
Together with Bar Goa, ROOH reflects a continuing interest in creating Indian dining spaces that consider both cultural roots and present-day health standards.
